2 tbsp curing salt
2 tsp garlic powder
2 tsp onion powder
1 tsp ground black pepper
½ tsp cayenne pepper
½ tsp liquid smoke
Mix Ingredients: In a large bowl, combine pork, beef, cheese, jalapeños, water, curing salt, garlic powder, onion powder, black pepper, cayenne pepper, and liquid smoke. Mix thoroughly.
Refrigerate: Cover with plastic wrap and refrigerate for 24 hours to let the flavors meld.
Preheat Oven: Heat oven to 325°F (165°C).
Shape Logs: Form the mixture into logs (1.5 to 2 inches in diameter) and place them on a parchment-lined baking sheet.
Bake: Cook for 1.5 to 2 hours until the internal temperature reaches 160°F (71°C). Let cool, then slice into rounds and serve!
